Tabouli

Preparation

Step 1


In a large mixing bowl, pour the water over the cracked wheat and cover. Leave to stand about 20 minutes until wheat is tender and the water is absorbed.


Step 2


Add the parsley, mint, onion, tomatoes and cucumber toss with the wheat mix.


Step 3


Combine the oil, lemon juice and salt in a separate bowl. Add to the wheat mixture and mix well. Serve chilled.

Ingredients

  • 250ml water

  • 150g cracked wheat

  • 30g minced fresh parsley leaves

  • 15g minced fresh mint leaves

  • 75g finely chopped yellow onion

  • 3 tomatoes, diced

  • 2 cucumbers, seeded and diced

  • 3 tbsp olive oil

  • 3 tbsp lemon juice, or to taste

  • 1 tsp sea salt
