Preparation
Step 1
Pull the lettuce leaves from the head, rinse gently under cold water and lay out on clean towels to dry. Use a spoon to remove the flesh in one piece from each half of the avocado. Slice the avocado flesh into thin wedges.
Step 2
Arrange the lettuce leaves on a plate and top with the avocado wedges, spring onions and coriander.
Step 3
Finish with a healthy drizzling of the dressing and serve.

Ingredients
For the salad
2 small to medium heads lettuce, discard any wilted leaves
1 avocado, pitted
1 large bunch spring onions, thinly sliced
Leaves from 1 bunch coriander, finely chopped
For the dressing
2 limes, juiced
4 1/4 tbsps extra-virgin olive oil
1/2 tsp salt
1 tsp sugar
About 20 grinds fresh black pepper
1 tbsp whole-grain mustard
