Yellow Split Pea Soup
Ingredients:
1 cup (250mL) yellow split peas
5 cups (1.25L) water
1/4 cup (60mL) chicken soup base
2 tbsp. (30mL) dehydrated chopped onion
1/4 cup (60mL) dehydrated diced carrot
1/4 cup (60mL) dehydrated diced potato
1/2 cup (125mL) diced cooked ham
1 bay leaf
1/8 tsp. (.5mL) ground black pepper
Directions:
In a saucepan or dutch oven, combine all ingredients, except black pepper. Bring to a boil, reduce heat. Cover & simmer (stirring occasionally) for 1 hr. or until peas are tender & soup has thickened. Remove the bay leaf & add pepper just before serving. Serves 5.
