Whole Wheat Casserole

Ingredients:
3 cups tomato juice
1 cup hard red wheat (wheat berries)
1 medium onion, chopped
1lb ground beef
2 cloves garlic, minced
½ cup chopped green pepper
1 cup corn
½ tsp. oregano
½ tsp. salt
1 cup grated cheese

Directions:
Bring tomato juice to a boil. Add wheat berries and simmer with the lid on until tender, about 1 hour. While cooking, brown ground beef. Add onions, garlic, and green pepper and continue cooking until vegetables are tender. Combine all ingredients except cheese in a casserole dish. Top with cheese and bake at 250 degrees F for 15 minutes or until the cheese is bubbly.
