Split Pea Soup w/ Bacon & Rosemary

Ingredients:
8 bacon strips, chopped
2 onions, diced
6 carrots, diced
4 garlic cloves, minced
6 tins (15oz.) chicken broth
3-1/2 cups green split peas, rinsed & drained
1 tsp. dried rosemary salt & pepper, to taste

Directions:
Saute bacon in stockpot over medium-high heat until browned (do not discard grease). Add onion, carrot & garlic & saute until softened (about 6 mins.) Add broth, peas & rosemary & bring to a boil. Reduce heat to med-low, cover & simmer for approx. 2 hours, stirring occasionally. Season to taste.
