Spiced Basmati Rice
Ingredients:
2 tsp. Olive Oil
1 Medium Onion, chopped
1 tsp. Ground Cloves
1 tsp. Cinnamon
1 tsp. Ground Coriander
2 cups Basmati Rice
4 cups boiling water
1/2 tsp. Salt
1 tbsp. Butter
1/2 cup Dried Cranberries or 1/2 cup Raisins
1/2 cup Slivered Almonds
Directions:
Saute onion in olive oil over medium heat. Add spices, reduce heat to med. low & cook 1 min. Stir in rice until coated in oil.
Add salt & boiling water. Bring mixture to a boil over med. heat. When water begins to boil, cover the pan & reduce heat to low. Cook for about 45 mins. until rice is tender. When rice is done, heat butter in a skillet. Add raisins/cranberries & nuts.
Saute until golden brown. Mix with rice & serve.
