Spelt Salad
Ingredients:
2 cups Whole Spelt Kernels
4 cups water
4 stalks Celery, diced
2 Carrots, diced
2-3 Green Onions, sliced
Small Red Pepper, chopped
handful Cherry Tomatoes, cut in halves
1/2 cup Crumbled Goat's Feta
1/3 cup Grapeseed Oil
3 tbsp. Oil (such as: Olive, Hemp or Canola)
1/4 cup Apple Cider Vinegar
2 tbsp. Basil
1 tbsp. Oregano
Salt & Pepper, to taste
Directions:
Combine Spelt Kernels & water in a medium pot & bring to boil, then let simmer for 45 mins. or until Spelt is soft. Allow to cool. Combine with chopped vegetables & Feta in a large bowl. Combine remaining ingredients & blend until the dressing is creamy, adding Salt & Pepper to taste, if desired.
