Soybean- Cabbage Casserole
Ingredients:
1 large cabbage (about 2 lbs.), shredded
3 tbsp. oil
1 tbsp. soy sauce or tamari
1/2 tsp. sugar
1 tsp. salt
2 cups cooked soybeans, ground
1 tbsp. whole wheat or unbleached white flour
1 egg dash of pepper 1/2 cup of milk butter or margarine
Directions:
In a skillet, saute cabbage in oil until it wilts, add soy sauce, sugar & half the salt. Cook mixture, covered, for another 15 mins. While that simmers, combine soybeans, flour, egg, pepper & remaining salt, then gradually stir in milk. In a greased two-quart baking dish, alternate layers of cabbage & bean mixture, beginning & ending with cabbage. Dot casserole with butter or margarine & bake in a 350* oven for about an hour.
