Roasted Garlic & Soybean Hummus
Ingredients:
2 cloves garlic
1-1/2 cups dried soybeans
1 tbsp. roasted sesame tahini
1 tbsp. olive oil
1 tbsp. lemon juice
1/2 cup fresh parsley salt, to taste
1 - 2 tbsp. water or vegetable broth
Directions:
Soak soybeans in a large pot of water overnight. Drain soybeans & cook on a strong simmer in fresh water for 2-1/2-3 hours or until very tender. Preheat broiler & broil garlic cloves for 5-10 mins. or until they just begin to brown & can be pierced easily with a fork. In a food processor, combine garlic with cooked soybeans, tahini, olive oil, lemon juice & parsley. Blend until smooth, adding salt to taste & water or broth until desired consistency is reached. It can be made thick to spread on bread or crackers or thin for use as a dip for veggies, etc.
