Refried Pinto Beans

Ingredients:
2 quarts water
2 cups pinto beans, presoaked
1/3 cup unsalted butter (or 2/3 cup lard)
1 large onion, diced
salt & black pepper, to taste

Directions:
Bring water to a boil in a medium pan. Add beans, reduce heat, cover & simmer 1-1/2 hrs. (Beans should be cooked through & creamy inside). Mash, along with liquid in the pot. Heat butter in a med. saucepan over medium high heat. Saute onions with salt & pepper, about 10 min. Add mashed beans & continue cooking, stirring occasionally, until liquid evaporates & the beans form a mass that pulls away from the sides & bottom of the pan (10 mins.)
