Rancher’s Beef Soup
Ingredients:
1/2 cup (125mL) Pot Barley
1 cup (250mL) finely chopped Lean Beef
6 cups (1.5L) Water
1/3 cup (85mL) Beef Soup Base
1 finely chopped medium Onion
2 finely chopped medium Carrots
1/2 cup (125mL) chopped Celery
1/2 cup (125mL) sliced Mushrooms
Salt & Pepper, to taste
Directions:
Add Barley & Beef to broth. Cover, bring to boiling. Reduce heat, simmer for 1 hour. Add chopped Vegetables & Seasonings. Simmer 30 minutes longer or until Vegetables are tender.
