Raisin Energy Bites
Ingredients:
4 Egg Whites (or 2 Whole Eggs)
4 tsp. Vegetable Oil
3/4 tsp. Vanilla Extract
1 cup Thompson Raisins
3 tbsp. Raw Sunflower Seeds
1/4 cup Sugar
1 tsp. Cinnamon
1-2/3 cups Granola
3 tbsp. Toasted Wheat Germ
4 tsp. Sesame Seeds
Directions:
In a large bowl, beat Egg Whites & Sugar with whisk until smooth. Beat in Oil, Cinnamon & Extract. Stir in remaining ingredients; blend well. Generously coat a 13"x9" baking pan with non-stick spray. Turn Raisin mixture into pan; pat to even layer. Bake at 300*F for 20-25 mins. or until golden brown.Cool 5 mins. in a pan. Loosen edges & invert onto wire rack to cool. Cut into bite or bar sized pieces & store in an airtight container.
