Quinoa Stuffed Bell Peppers
Ingredients:
3 cups black quinoa
1 - 4oz. tin green chiles
1 cup corn kernels
1/2 cup canned black beans, drained & rinsed
1/2 cup diced tomatoes
1/2 cup shredded pepper jack cheese
1/4 cup crumbled feta cheese
3 tbsp. chopped fresh cilantro leaves
1 tsp. cumin
1 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. chili powder, or more to taste
1/2 tsp. kosher salt & freshly ground black pepper, to taste
6 bell peppers, tops cut, stemmed & seeded
Directions:
Preheat oven to 350*F. Line a 9"x13" baking dish with parchment paper. In a large bowl, combine quinoa, green chiles, corn, beans, tomatoes, cheeses, cilantro, cumin, garlic, onion & chili powder, salt & pepper. Spoon the filling into each be pepper cavity. Place on a prepared baking dish, cavity side up & bake until the peppers are tender & the filling is heated through, about 25-30 mins. Serve immediately.
