Porridge Oats Breakfast Cookies
Ingredients:
1 cup whole wheat flour
3 cups Rogers Porridge Oats
1 tsp. baking soda
3/4 tsp. salt
1/2 tsp. allspice
2 tsp. cinnamon
2 tsp. ground ginger
2 eggs
1/3 cup vegetable oil
1-1/4 cups unsweetened applesauce
3/4 cup brown sugar
1 tbsp. grated orange rind
2 tsp. vanilla
3/4 cup chopped almonds
1/2 cup sunflower seeds
1 cup dried cranberries
Directions:
Preheat oven to 350*F (175*C). Combine flour, porridge oats, baking soda, salt & spices. In a separate bowl, beat eggs, vegetable oil, applesauce, brown sugar, orange rind & vanilla. Add into the flour mixture, then stir in chopped almonds, sunflower seeds & dried cranberries. Using about 1/4 cup of cookie dough for each cookie, place on a greased or parchment-lined cookie sheet & press down with a fork to form a cookie approx. 3.5" in diameter. Bake for
15-20 mins. or until lightly browned. Let cool on cookie sheet before removing.
Makes approx. 20-24 cookies.
