Pear & Corn Flour Muffins

Ingredients:
3 eggs (separated)
1/4 lb. margarine (if possible, use one made from corn oil)
1/2 cup cane sugar
1-1/2 cups corn flour
1 cup diced pears
1 tsp. cinnamon (optional - top muffins with cinnamon before baking)

Directions:
Separate the eggs. In a mixer, add margarine & sugar; cream together. Add one egg yolk at a time & mix until smooth. Add diced pears, then the corn flour. Whip egg whites until stiff but not dry. Fold whipped egg whites into mixture. Grease muffin tin with 100% corn oil. Fill muffin cups 3/4 full & bake at 350*F for 20-25 mins. Makes 12 muffins
