Peanut Butter Squares

Ingredients:
1/2 cup unsalted butter
1 cup smooth peanut butter
1-1/2 cups butterscotch chips
1- 200g mini marshmallows

Directions:
Butter & line an 11x11" baking dish with parchment paper, leaving enough excess length to later grip & lift cooled squares from the pan. In a large pot, melt butter over low heat. Add peanut butter & butterscotch chips, stirring constantly with a rubber spatula until mixture is liquid & smooth. Remove from heat & set aside for 10 mins. Fold in marshmallows. Refrigerate several hours or overnight. Cut into squares or bars using a sharp knife. Note: if you don't have parchment paper, simply butter the pan. The first square may be difficult to remove from the pan but the rest will come out cleanly. Note - chopped peanuts (1/2 cup) may be added in for extra crunch & flavour. Great recipe - no baking required!
