Old Fashioned Quebec Style Pea Soup

Ingredients:
2 Cups (500mL) Yellow Split Peas
10 Cups (2.5L) Water
1 Hambone or 1/4 lb. (125g) Ham, Chopped
5 Medium Onions, Chopped
3 Medium Carrots, Peeled & Chopped
2 Stalks Celery (including leaves), Chopped
1 Tbsp. (5mL) Summer Savory
1 Bay Leaf
2 Tbsp. Chicken Soup Base
Salt & Pepper, to taste

Directions:
Rinse Peas. In a large soup pot, combine Peas, Water, Hambone or Ham, Onions, Carrots, Celery, Summer Savory & Bay Leaf; bring to a boil. Skim off any scum.
Cover & simmer for 3 hours or until peas are softened & soup has thickened. If the soup is too thin, uncover & simmer for 30 mins. longer. Season with Salt & Pepper.
Discard Bay Leaf & Hambone. Makes 8 servings.
