Oat Bran Muffins

Ingredients:
1 cup Whole Wheat Flour
1 cup Oat Bran
1/3 cup Light Brown Sugar
1-1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/4 tsp. Salt
1/4 tsp. Ground Cinnamon
1 tsp. Grated Orange Zest (outer skin of an orange)
1 large Egg, lightly beaten
1/4 cup Unsulphured Molasses or Mild flavored Honey
1 tsp. Pure Vanilla Extract
2 tbsp. Canola Oil
1-1/4 cup Milk
1/2 cup Raisins or Currants

Directions:
Preheat oven to 400*F & place rack in centre of oven. Line a 12 cup muffin pan with paper liners or spray with a non-stick vegetable spray. In a large bowl, stir together Flour, Oat Bran, Sugar, Baking Powder, Baking Soda, Salt, Cinnamon & Orange Zest. In another bowl, whisk together the lightly beaten Egg, Molasses (or Honey), Vanilla Extract, Oil & Milk. Add the wet ingredients to the dry ingredients & stir just until moistened. Gently stir in Raisins (the batter will be quite thin).
Pour batter to fill the muffin cups & bake about 16-20 mins. Cool.
