Mung Bean Vegetable Stew
Ingredients:
2 tbsp. butter
1/2 cup onion, chopped
1 clove garlic, minced
1/2 cup celery, chopped
1 cup carrots, sliced
1 cup chicken or vegetable stock
1 large unpeeled potato, cubed
1 tbsp. soy sauce
2 cups mung beans, cooked & drained
1/2 cup fresh parsley, chopped
1 tsp. dried tarragon
Directions:
Saute onions & garlic. Add celery, carrots & stock, cover & simmer for 30 mins. Add potatoes, tarragon & soy sauce, cook for 15 mins. longer. Stir in beans & parsley.
