Moong Dal w/ Tomato & Onion
Ingredients:
1 cup yellow split mung beans
2 cups water
1/4 tsp. ground turmeric
2 serrano chilis, cut in half, lengthwise (more or less according to your taste)
1 medium onion, thinly sliced
1 tsp. minced ginger
2 medium tomatoes, coarsely chopped
2 tsp. kosher salt
2 tbsp. vegetable oil
1/2 tsp. brown mustard seeds
Directions:
In a medium saucepan, bring beans, turmeric & water to a boil. Cover & cook on low for approx. 20 mins. until dal is barely tender. Stir in ginger & garlic & simmer for 5 more mins. Add tomatoes & salt, simmer for another 5 mins. & set aside. In a fry pan combine oil, mustard seeds & chilis. Cover & cook on low until seeds pop & chilis turn dark. Stir spices into dal & reheat. Serve with rice or roti.
