Millet Chili

Ingredients:
1 tbsp. Olive oil
1 large white onion, diced
1 green bell pepper, diced
4 cloves garlic, finely chopped
1 jalapeno pepper, finely chopped
1 tsp. Chili powder
1 tsp. Cumin
1 (15oz) can corn kernels
1 (15oz) can dark red kidney beans
1 (15oz) can light red kidney beans
2 (15oz) cans vegetable broth
1 cup millet
1 (6oz) can tomato paste
1 (15oz) can diced tomatoes
Salt and pepper, to taste

Directions:
Heat olive oil in a saucepan. Saute onions, peppers, garlic, salt and pepper, for 4-5 minutes or until onions have become translucent. Add in corn, beans, broth, spices, and bring to a low boil. Add millet and stir. Cover and reduce heat to medium-low and simmer for 30 minutes. Remove lid, add diced tomatoes and tomato paste, stir. Chili is ready to serve. Serve with shredded cheese or sour cream on top.
