Lima Bean Soup

Ingredients:
1 lb. (454g) lima beans, precooked
2 stalks celery, chopped
8 cups water
4 cubes vegetable bouillon
5 carrots, chopped
1 leek, bulk only, chopped
2 tbsp. minced shallots
2 tbsp. olive oil

Directions:
In a soup pot saute vegetables in olive oil until onions & celery are translucent. Add in lima beans & saute another 2-3 mins. Bring 4 cups of water to a boil; add in the bouillon & stir until dissolved. Add broth to bean mixture then add remaining water. Simmer over low 1 - 1-1/2 hours.
