Lentil Soup
Ingredients:
1 tbsp. (15mL) vegetable oil
2 cups (500mL) onions, peeled, chopped & sauteed
1 cup (250mL) carrots, thinly sliced
1/2 tsp. (2mL) leaf thyme
1/2 tsp. (2mL) marjoram
19oz. (540mL) tin tomatoes, chopped
1 cup (250mL) lentils, rinsed
8 cups (2L) chicken broth
salt & pepper, to taste
4oz. (115g) cheddar-type cheese, grated
Directions:
Saute onions in oil. Pour all ingredients, except cheese into a 4qt. (4L) dutch oven or soup pot. Simmer, uncovered for 45 mins. or until lentils & vegetables are tender. Sprinkle 1-2 tbsp. of cheese in each bowl before serving.
