Lentil Dhal

Ingredients:
1 tbsp. coconut oil
2 garlic cloves, crushed
1 cup red lentils, rinsed
1 tin (400g) tomatoes, diced
1 medium brown onion
1 tsp. garam masala
1/2 tsp. ground turmeric
2 cup water
1 tsp. ginger, finely chopped
1 red chili, seeds removed & finely chopped

Directions:
Heat oil in a heavy based pan & add onion, garlic, ginger & chili. Saute until the onion is golden. Add the garam masala and turmeric. Cover & cook for 15 mins. Add the seasoning & continue to cook until the Dhal has a thick consistency. Season to taste.
