Lemon-Garlic Chickpea Dip
Ingredients:
2 cups chickpeas/garbanzo beans, precooked
1 clove garlic, cracked from skin
1 lemon, zested & juiced
4 to 5 sprigs fresh thyme leaves, stripped from stems
salt & pepper, to taste
a few drops hot sauce, to taste 1/4 cup extra virgin olive oil
Directions:
Combine chickpeas, garlic, lemon zest & juice, thyme, salt & pepper & hot sauce in a food processor. Turn the processor on & stream in the olive oil. Transfer the dip to a dish & surround it with veggies (ie: celery, cucumber, bell peppers, grape tomatoes) & chips/snack crackers.
