Lemon Coconut Bars
Ingredients:
1 cup + 2 Tbsp. Ground Almonds
1-1/2 cups Pitted Dates
1/4 tsp. Salt
Dash of Vanilla Extract
1 cup + 2 Tbsp. Dried Unsweetened Coconut Zest of 1 Lemon + 3 Tbsp. Lemon Juice (zest the Lemon first, then juice it)
Directions:
Cut a piece of parchment paper to fit the bottom of an 8" square baking pan. Sprinkle 2 tsp. Ground Almonds over parchment paper. Place all ingredients in a food processor, reserving 2 tbsp. of Coconut. Process until well combined & mixture clumps together. Coat your hands in butter or vegetable oil & press mixture evenly into the pan. Dust with reserved Coconut. Chill 3 hours. Cut into 25 squares & serve.
