Gluten Free Almond Flour Blueberry Muffins
Ingredients:
2 eggs
1/3 cup honey
4 tbsp. butter or coconut oil
1 tsp. pure vanilla
3/4 tsp. baking soda
1/2 tsp. sea salt
1 tbsp. lemon zest
2 cups almond flour
1/2 cup chopped pecans
1 cup fresh blueberries
Directions:
Heat oven to 325*
Combine eggs, honey, butter (or oil), vanilla, baking soda, sea salt & lemon zest. Fold in almond flour, pecans & blueberries. Spoon into muffin tins (lined with baking cups) & bake for 20-30 minutes.
Makes one dozen muffins.
