Fluffy Almond-Millet Waffles- Recipe

Ingredients:
1-1/4 cup Millet Flour
3/4 cup Almond Flour
1/2 tsp. Baking Powder
1/4 tsp. Sea Salt
1 cup Milk (preferably whole milk or almond milk)
3 Egg Yolks
1 tsp. Vanilla Extract
3 tbsp. Butter (or Coconut Oil), melted
2 tbsp. Honey, melted
3 Egg Whites

Directions:
Preheat waffle iron to a medium setting (we want a slightly crisp exterior with a soft interior). In a large bowl, combine the millet flour, almond flour, baking powder & salt. Stir until well combined. Set aside. In a medium bowl, whisk the egg whites until they form a soft peak. Use an electric mixer or a fork & beat quickly by hand for about 5 mins. Set aside. In med. bowl, whisk egg yolks, vanilla extract & milk. Add this liquid mixture to the dry ingredients. Then pour in the melted honey & butter. Mix until well combined. Fold in the beaten egg whites. Pour onto the waffle iron. Serve immediately with your favourite syrup & fresh berries/fruit. Makes 6-8 large waffles. (Make extra & freeze in ziploc bags for busy mornings. Separate each waffle with a piece of parchment or wax paper to avoid sticking. Simply take out of the freezer when ready to eat & pop into your toaster!)
