Dried Tomato Basil Couscous

Ingredients:
2 cups Chicken Broth
1/4 tsp. Garlic Powder
1-1/2 cup Couscous
1/2 cup Sundried Tomatoes, diced
1/4 cup sliced Green Onions (Scallions) (tops included)
2 tbsp. minced Fresh Basil
2 tbsp. Sun Dried Tomato Vinaigrette (or your favourite dressing)
Salt & Pepper, to taste

Directions:
Heat chicken broth to boiling & stir in garlic powder. Place couscous in a large heat-proof bowl. Stir in garlic, chicken broth mixture, cover & let steam for 5 mins. until tender. Fluff with a fork & gently stir in dried tomatoes, green onions, basil & vinaigrette. Season to taste with salt & pepper. Fluff couscous again with a fork & serve hot or at room temperature. Makes 4-6 servings.
