Curried Adzuki Bean Dip

Ingredients:
1 cup dry Adzuki beans, rinsed
1 tsp. garam masala powder or curry powder
6 sundried tomatoes
1 tsp. red pepper flakes (or to your taste)
2 cloves of garlic, peeled & roughly chopped
1/2 cup packed parsley leaves salt, to taste

Directions:
Place beans in a saucepan, add enough water to cover the beans by an inch; bring to a boil. Once water boils, cover with lid & lower heat to a simmer & cook for 45 mins. to an hour or until the beans are tender. Turn off the heat & set aside to cool. Drain the beans once they have cooled & add them to a food processor or blender along with the remaining ingredients. Blend well (to desired texture). Garnish the dip with some red pepper flakes. Serve with tortilla or pita chips.
