Creamy Rice Pudding

Ingredients:
2 cups unsalted, short grain cooked rice
2-1/2 cups milk
1/4 cup golden raisins
2 eggs
3 tbsp. sugar
1/2 tsp. vanilla
1/8 tsp. salt
1/8 tsp. ground cinnamon

Directions:
Combine cooked rice, milk & raisins in a saucepan. Bring just to boiling over medium heat, stirring occasionally. Lower heat to medium-low; cover with lid set slightly ajar. Simmer for 25-35 mins., stirring occasionally, until rice is very soft & mixture is thickened. Beat together eggs, sugar, vanilla, salt & cinnamon in a bowl. Stir in a little hot rice mixture. Then stir egg/sugar mixture into a saucepan with rice mixture. Cook for 2 mins. stirring constantly. Cool to room temperature. Place in bowl & refrigerate until chilled.
