Coffee Cake w/ Caramel Topping
CAKE Ingredients:
1-1/4 cups boiling water
1 cup 7 grain cereal
1/2 cup butter
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
1-1/3 cup flour
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
TOPPING Ingredients:
1/2 cup melted butter
1 cup brown sugar
1 egg or 2 egg yolks
1 cup coconut
1 tsp. Vanilla
Directions:
Pour boiling water over 7 grain cereal & stir to blend; let cool. In a large mixing bowl, cream sugar, butter & eggs. Add vanilla, cereal mixture & dry ingredients. Beat well & put into a greased 9x13" pan. Bake at 375*F for approx. 30 mins. While the cake is baking, prepare the topping by mixing together melted butter, brown sugar & egg, beating well. Add coconut & vanilla. Spread topping over hot cake & return to the oven for another 10 mins.
