Chunky Vegetable & Bean Soup
Ingredients:
2 tbsp. vegetable oil
1/4 cup dehydrated chopped onion
1/2 cup dehydrated sliced mushrooms
1 cup vegetable soup flakes
1/4 cup sweet sherry
2 tbsp. tomato paste
4 tbsp. chicken soup mix
7 cups water
1 cup small red beans, presoaked
Directions:
Boil small red beans in 4 cups of the water for 1-1/2 hours (or until beans are tender). Add remaining ingredients except for the sherry. Stir well then bring to a boil. Lower heat & simmer, uncovered for 20-25 mins. Add sherry & mix well. Serves 8.
