Chocolate Cake

Ingredients:
2 cups Sugar
2 Eggs
2 tsp. Vanilla
2/3 cup Canola Oil
2 tsp. Baking Powder
2 tsp. Baking Soda
1 tsp. Salt
2 cups Boiling Water
3 cups Barley Flour
2/3 cup Cocoa

Directions:
In a large bowl, beat Sugar, Eggs, Vanilla & Oil for 4 mins. In another bowl, sift together Barley Flour, Cocoa, Baking Powder, Baking Soda & Salt. Stir dry ingredients into liquid mixture alternately with boiling water, starting & ending with dry ingredients. Beat until smooth. Pour into a greased 9x13" pan (3L). Bake at 350*F for 45 mins. or until the centre springs back when lightly touched. Cool, then frost with your favourite icing.
