Chickpea & Quinoa Salad
Salad Ingredients:
1 cup quinoa
2 cups water
1/2 cup sliced almonds, toasted
1-1/4 cup chickpeas (garbanzo beans), cooked
1 large gala apple, cored & chopped
3 tbsp. gorgonzola cheese
2 green onions, thinly sliced (green & white parts)
Vinaigrette - Ingredients:
1/3 cup apple cider or apple juice
3 tbsp. apple cider vinegar
2 tbsp. olive oil
1 tsp. agave nectar or honey
1/4 tsp. kosher salt
Directions:
Salad - In a fine mesh strainer, rinse quinoa well & drain. In a medium pot, combine quinoa & water. Bring to a boil, then cover & turn heat to low. Cook until all water is absorbed (about 20 mins.). Remove from heat, fluff with a fork & transfer to a cookie sheet, spreading quinoa in a thin layer, to cool. In a large bowl, mix together cooled quinoa, almonds, chickpeas, apple, cheese & green onions.
Vinaigrette - Whisk together apple cider or juice, apple cider vinegar, olive oil, agave nectar & salt. Pour dressing over the mixed salad & toss to coat.
Serves 4 as an entree.
