Bulgar Garden Salad

Ingredients:
1/2 cup dry bulgar
1 cup warm water
1 cup peeled & diced cucumber
3/4 cup diced tomatoes
1/4 cup thinly sliced green onions
1/4 cup diced green bell pepper
5 radishes, sliced
1/4 cup minced fresh parsley (or 2 tbsp. dried parsley)
1/2 tsp. salt
1/8 tsp. black pepper
3 tbsp. lemon juice
2 tsp. minced fresh mint or cilantro leaves (or 1/2 tsp. dried) (optional)

Directions:
Combine the bulgar & water in a bowl. Let stand until the bulgar is soft, about 30 mins. Drain off the excess liquid & pour the bulgar in a large serving bowl. Add the remaining ingredients & toss to combine. Cover & chill for 2 hours or more to allow the flavours to blend. Serve cold. Makes 6 (1/2 cup) servings.
