Buckwheat Pancakes

Ingredients:
1 cup buckwheat flour
1-1/2 tsp, white sugar
1 tsp. baking powder
1/4 tsp. salt
1/4 tsp. baking soda
1-1/4 cup buttermilk
1 large egg, beaten
1/4 tsp. vanilla extract
1 tbsp. unsalted butter (or as needed)

Directions:
Whisk buckwheat flour, sugar, baking powder, salt & baking soda together in a bowl. Beat buttermilk, egg & vanilla extract together in another bowl. Pour flour mixture into buttermilk mixture & whisk until batter is thick & smooth. Let the batter rest for 5 mins. until bubbles form & batter relaxes. Melt butter on a griddle over medium heat. Drop batter by large spoonfuls onto the griddle & cook until bubbles form & the edges are dry (3-4 mins.) Flip & cook until browned on the other side (2-3 mins.) Repeat with remaining batter. Makes 4 servings.
