Buckwheat Cabbage Rolls

Ingredients:
2-1/2 Cups Buckwheat
1 Medium Cabbage
1-1/2 Cups Water
1 Cup Tomato Juice
2 Medium Potatoes, Cooked & Mashed
1-1/2 Ib. Salt Pork or Bacon fried
Salt & pepper, to taste

Directions:
Scald Cabbage & let steam until leaves can easily be taken apart. In the meantime, cook buckwheat in boiling water until all the water is absorbed. Add mashed potatoes, fried bacon & seasonings to taste.
Use it to fill cabbage leaves, roll & tuck in securely. Place in a casserole dish, add hot tomato juice & cover. Bake at 350* for about 45 mins.
