Blueberry Nut Oat Bran Muffins

Ingredients:
1-1/2 cups Oat Bran
1-1/2 cups All Purpose Flour
1/2 cup packed Brown Sugar
2 tsp. Baking Soda
2 tsp. Baking Powder
1 tsp. Ground Cinnamon
1/2 tsp. Salt
1-1/8 cups Apple Sauce
1/2 cup Egg Substitute
2 Tbsp, Canola Oil
1 tsp. Vanilla Extract
1-1/2 cups Blueberries
1/4 oz. Chopped Pecans
1/2 cup low fat Granola

Directions:
Preheat oven to 400*F (200*C). Line a 12 cup muffin pan with paper liners & spray liners with cooking spray. In a large bowl, mix oat bran, flour, brown sugar, baking soda, baking powder, cinnamon & salt. In a separate bowl, blend Apple Sauce, Egg Substitute, Canola Oil & Vanilla. Thoroughly mix Apple Sauce mixture into flour mixture. Fold in Blueberries & Pecans. Spoon batter into prepared muffin cups.
Sprinkle batter with granola & press lightly to make it stick. Bake for 18 mins. in a preheated oven or until the toothpick comes out clean. Cool.
