Black Sticky Rice Pudding w Coconut (Khao Neow Dam Piag)
Ingredients:
1 cup Thai Black Rice
6 cups water
1 cup Coconut Milk
1/4 - 1/2 cup packed Brown Sugar, to taste
1/2 tsp. Salt, or to taste
Sweetened Shredded Coconut or Toasted Sesame Seeds (for garnish) (optional)
Directions:
Rinse & drain Rice; place in a large saucepan. Add water to cover Rice. Remove any rice grains that float to the top. Bring to a boil over high heat, then lower heat to just a simmer. Simmer for about 45 mins., uncovered, stirring occasionally, until rice is tender. Add more water if needed, or pour some off (so that the water line is just below the grains of rice). Add Coconut Milk, Sugar & Salt & simmer, stirring frequently until pudding consistency is reached. Sprinkle garnish over top. Serve hot or at room temperature.
