Basic Millet Pilaf

Ingredients:
1 tablespoon olive oil or sesame oil
1 cup millet
1 small sweet onion, chopped fine
1 carrot, chopped fine
Large pinch of sea salt
3 cups water

Directions:
Heat olive oil in a heavy bottomed saucepan over medium heat. Add millet and toast for 5 minutes, stirring frequently, until golden. Add onion and carrot, cook for 2 more minutes, then add sea salt and water. Bring to a boil, cover, and reduce heat to a simmer. Cook for 30 minutes. Remove from heat and let stand for 5 minutes. Fluff with a fork and serve.
