Preparation

Step 1


Pour the boiling water into a small heatproof bowl, sprinkle in the salt and sugar and mix until dissolved. Add the red wine vinegar, stir, then mix in the chopped mint and season to taste.

  • 1 large handful mint leaves, finely chopped

  • Pinch of salt

  • 4 tbsp boiling water

  • 2 tbsp caster sugar

  • 4 tbsp red wine vinegar
