Tartare sauce

Preparation

Step 1


In a small mixing bowl, stir together the mayonnaise, cornichons, parsley, tarragon, capers, spring onions, lemon zest and juice. Add the hot sauce, if using.


Step 2


Refrigerate for 30 minutes for the flavours to come together.

Ingredients

  • 250ml prepared mayonnaise

  • 1 tbsp finely chopped gherkins

  • 1 tbsp finely chopped flat-leaf parsley leaves

  • 1/4 tsp finely chopped fresh tarragon

  • 1 1/2 tbsps chopped capers

  • 1 small spring onion, white and green, minced

  • 1/4 tsp finely grated lemon zest

  • 1/2 tsp freshly squeezed lemon juice

  • 2 to 3 drops hot sauce (optional)
