Step 1


Smash the garlic clove, sprinkle with the salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Shake the garlic paste, oil, shallot, pepper, carrot, vinegar, parsley, water, and pepper in a cruet. Serve.

  • 1 clove garlic, smashed

  • 1 1/4 tsp coarse grain salt

  • 80ml extra-virgin olive oil

  • 1 small shallot or 45g red onion, minced

  • 1/2 small red sweet pepper, minced

  • 1 carrot, peeled finely grated

  • 3 tbsp white wine vinegar

  • 2 tbsp minced fresh flat leaf parsley

  • 2 tbsp water

  • Freshly ground black pepper
