Gluten Free Potato Starch Sponge Cake

Ingredients:
1-1/4 cups sugar
5 tsp. lemon juice
1-1/4 cups potato starch flour (sifted)
8 eggs (separate egg whites)
1 tube pan is required

Directions:
Preheat oven to 350*F. Reduce heat to 300*F for baking. In a large bowl, beat egg whites & slowly add sugar. Beat on fast until egg whites are stiff & creamy. Fold egg whites into egg yolks. Mix with a spatula. Slowly add the sifted potato starch to the egg mixture & mix well. Pour into an ungreased tube pan & bake for 30 mins. or until done (approx. 30-45 mins.) Cake is done when it springs back. Remove from the oven & let cool. Slowly remove from the baking pan. Serve plain or with a creamy custard & fresh fruit.
