Ingredients
1 (14.5-ounce) package Nacho Cheese Doritos, crushed, divided
3 cups cooked chicken, shredded or diced
2 (10.5-ounce cans) condensed cream of chicken soup
8 ounces sour cream
1 (15.25-ounce) can corn, drained
2 cups Mexican cheese blend, divided
1 (10-ounce) can Ro-tel, drained
1 tablespoon taco seasoning
Preparation
Step 1
Preheat the oven to 350 degrees Fahrenheit. Grease a 9×13 baking dish.
Step 2
Crush the Doritos. Spread half of them on the bottom of the greased dish. Set aside.
Step 3
In a large bowl, combine the chicken, cream of chicken soup, sour cream, corn, half of the cheese, Rotel, and taco seasoning. Spread the crushed Doritos over the top.
Step 4
Bake it for 20 minutes. Top it with the remaining half of Doritos and cheese. Bake it for 5 to 7 minutes more or until bubbly. Let the casserole sit for 5 minutes before serving.
