Ingredients
1 clove garlic, smashed
1 1/4 tsp coarse grain salt
80ml extra-virgin olive oil
1 small shallot or 45g red onion, minced
1/2 small red sweet pepper, minced
1 carrot, peeled finely grated
3 tbsp white wine vinegar
2 tbsp minced fresh flat leaf parsley
2 tbsp water
Freshly ground black pepper
Preparation
Step 1
Smash the garlic clove, sprinkle with the salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Shake the garlic paste, oil, shallot, pepper, carrot, vinegar, parsley, water, and pepper in a cruet. Serve.
