Lettuce avocado salad and lime dressing

About the Recipe


  • For the salad

  • 2 small to medium heads lettuce, discard any wilted leaves

  • 1 avocado, pitted

  • 1 large bunch spring onions, thinly sliced

  • Leaves from 1 bunch coriander, finely chopped

  • For the dressing

  • 2 limes, juiced

  • 4 1/4 tbsps extra-virgin olive oil

  • 1/2 tsp salt

  • 1 tsp sugar

  • About 20 grinds fresh black pepper

  • 1 tbsp whole-grain mustard


Step 1

Pull the lettuce leaves from the head, rinse gently under cold water and lay out on clean towels to dry. Use a spoon to remove the flesh in one piece from each half of the avocado. Slice the avocado flesh into thin wedges.

Step 2

Arrange the lettuce leaves on a plate and top with the avocado wedges, spring onions and coriander.

Step 3

Finish with a healthy drizzling of the dressing and serve.
