Cherry, almond and herb salad

About the Recipe


  • 35g sliced almonds, toasted

  • 2 tbsp roughly chopped fresh mint leaves

  • 2 tbsp roughly chopped coriander leaves

  • 140g washed and dried lamb's lettuce, stalks removed

  • 2 tbsps olive oil

  • 1 tbsps white wine vinegar

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 25g dried tart cherries


Step 1

In a small skillet, toast the sliced almonds until just browned. Set aside.

Step 2

Combine the herbs and lettuce in a bowl and toss to combine. Set aside.

Step 3

In a separate bowl, whisk together oil and vinegar and season well with salt and pepper. Drizzle dressing over salad and toss to coat. Taste, adjust seasoning as needed.
